Avocado and tomato on toast

Believe it or not, the avocado is a single seeded berry that is native to Mexico. The avocado is one of the most versatile fruits to add to your diet t that you can! You can do so much with it and if offers us some amazing health boosting reasons to eat it more often! At a whopping 322 calories per regular sized avocado, you may wonder why it is hailed at being a superfood known to assist in weight loss, but they are actually great at reducing hunger pangs, and the monounsaturated fats found in the fruit help to prevent the build up of fats around the belly. How about that!!

Ingredients

  • 1 ripe avocado
  • 1 tomato
  • 2 slices of wholemeal bread toasted
  • juice of half a lemon
  • salt and pepper
  1. Slice open the avocado and scoop out the flesh, mash in a bowl and add lemon juice to keep it from oxidizing.
  2. Toast your wholemeal bread to your liking and scrape the avocado onto the toasted bread as thickly as you like.
  3. Slice the tomato and place on top of the avocado and season with salt and pepper.

This really is the easiest breakfast you can make. It is healthy, delicious and will fill you up for the day! The entire recipe contains less than 600 calories and this is guaranteed to stop you munching on junk food in your work breaks!
