Avocado and tomato on toast


Believe it or not, the avocado is a single seeded berry that is native to Mexico. The avocado is one of the most versatile fruits to add to your diet t that you can! You can do so much with it and if offers us some amazing health boosting reasons to eat it more often!   • 1 ripe avocado
  • 1 tomato
  • 2 slices of wholemeal bread toasted
  • juice of half a lemon
  • salt and pepper
  1. Slice open the avocado and scoop out the flesh, mash in a bowl and add lemon juice to keep it from oxidizing.
  2. Toast your wholemeal bread to your liking and scrape the avocado onto the toasted bread as thickly as you like.
  3. Slice the tomato and place on top of the avocado and season with salt and pepper.
